The one number that matters most in honey testing
If you ask any honey lab which single test tells you the most about quality, moisture content is usually the answer. It's simple, it's measurable, and it has a direct effect on whether honey stays honey — or starts fermenting in the jar.
At Sacred Honey, every batch we sell is moisture-tested against the FSSAI limit of 20% or below, before it leaves our apiaries in Vikarabad and L.B. Nagar, Telangana. This post explains why that number exists and why it matters more than most people realise.
What moisture content actually means
Honey is, roughly, sugar (glucose and fructose) and water, with small amounts of other natural compounds. Moisture content is simply the percentage of that water. Nectar itself is mostly water when bees first collect it — it's the bees' own work, fanning the hive and evaporating moisture out of the nectar over days, that concentrates it into honey. A properly ripened, capped honeycomb cell holds honey that the bees have already reduced to a stable, low-moisture state.
That's why harvesting only from capped, mature comb matters so much — capping is the bees' own signal that the honey inside has reached the moisture level they consider "done." Pulling frames before cells are capped means harvesting honey that's still too wet.
Why moisture content decides quality
1. Fermentation risk. Honey with too much water content is vulnerable to fermentation — natural yeasts (which are present in honey in small amounts regardless of quality) can become active and multiply when there's enough water available, turning honey fizzy, sour, or alcoholic over time. Low-moisture honey is naturally resistant to this because there simply isn't enough available water for yeast activity, even though the yeast itself is present.
2. Shelf stability. Honey's famous long shelf life depends heavily on staying below a safe moisture threshold. High-moisture honey degrades faster and is less stable in storage, regardless of how it's packaged.
3. It's a quick signal of harvest practice. Honey harvested from uncapped or immature comb, or harvested too early to increase yield, will generally test higher in moisture. So a moisture reading isn't just a chemistry number — it's a proxy for how carefully (or hastily) the honey was harvested in the first place.
4. It's regulated, not optional. FSSAI sets a moisture limit for honey sold in India — 20% or below. This isn't a marketing claim brands choose to make; it's a standard honey has to meet to be legally sold as honey.
How moisture is measured
Honey moisture is typically measured using a refractometer — an instrument that reads how light bends passing through a small honey sample, which correlates closely to sugar concentration and therefore water content. It's a fast, standard method used in labs and by serious beekeepers alike. We test every batch this way (among other checks) before it goes out under our name.
Does moisture content vary by floral source?
Yes, to some extent. Different nectar sources, harvest seasons, and even hive humidity conditions can produce natural variation in starting moisture before the bees finish ripening it — and different honeys crystallise and behave differently afterward too. Our Tulasi Honey (holy-basil notes, lightly spicy) and our Multi Floral Honey (wildflower, complex) are both harvested and tested the same way, but as with all six of our varieties, small natural batch-to-batch variation is normal — that's part of what raw, real honey looks like, as opposed to a standardised industrial product blended for total consistency.
What high moisture honey looks and behaves like
You generally can't tell moisture content by eye with any precision — that's exactly why lab testing exists rather than home guessing. But a few loose behavioural signs can sometimes hint at it: honey that seems unusually runny for its variety, or that starts to smell slightly sour or "off" after some time in storage, may be showing signs of a moisture or fermentation issue. How this connects to raw vs. processed honey
Here's a subtlety worth knowing: heating honey doesn't reduce its actual water content in any meaningful, lasting way — pasteurisation is mainly about killing yeast activity and changing viscosity/shelf appearance, not fixing a moisture problem. In other words, heat is sometimes used to mask a moisture issue (killing the yeast that would otherwise ferment high-moisture honey) rather than to correct it. That's one more reason we harvest carefully from capped comb and test moisture directly, instead of relying on heat as a safety net.

Moisture testing isn't something you can verify by looking at a jar on a shelf — it comes down to trusting the seller's process and testing discipline. We test every batch we sell, including our Tulasi Honey and Multi Floral Honey, both raw, gravity-strained, and lot-stamped from our own apiaries.
Protecting moisture content after you buy it
A well-tested jar can still pick up moisture after purchase if it's stored carelessly, since honey is naturally hygroscopic (it draws water from humid air). A few simple habits protect it at home:
- Keep the lid tightly sealed between uses — don't leave the jar open on the counter, especially in humid weather.
- Use a clean, dry spoon every time. Introducing water on a wet spoon is one of the most common everyday causes of honey fermenting after purchase, regardless of how carefully it was tested at the source.
- Store at stable room temperature, away from direct sunlight or a warm stove-side shelf, where humidity and temperature swings are more likely.
- Don't decant into a container that previously held anything with residual moisture without making sure it's completely dry first.
None of this changes the moisture level the honey started with — that's determined at harvest and locked in by testing before sale — but it does help protect that starting quality for as long as possible once the jar is in your kitchen.
Why we keep repeating this number
If moisture content feels like a small, technical detail to build an entire quality story around, that's fair — but it's precisely because it's small and technical that it gets skipped by less careful sellers. A percentage on a lab report doesn't photograph as nicely as a jar on a rustic wooden table, but it's the number that actually tells you whether the harvest was done patiently (waiting for capped comb) or rushed. We'd rather lead with that number than with a prettier claim we couldn't back up.
