Raw vs Processed Honey: What Heating and Filtering Destroy

The short version

Raw honey is honey that has not been heated beyond what happens naturally in the hive, and has not been ultra-filtered to strip out everything except sugar water. Processed honey — the kind sold in most supermarket squeeze bottles — is typically heated (pasteurised) and ultra-filtered, which changes its texture, slows or stops crystallisation, and removes some of what made it "raw" in the first place.

Neither is unsafe to eat. But they are genuinely different products, and the differences matter if you're buying honey for its natural character rather than just as a sweetener. Let's go through what actually happens at each stage.

What "raw" means, precisely

At Sacred Honey, raw means:

  • Harvested only from capped, mature comb — bees seal a cell with wax once the honey inside is fully ripened. Pulling honey before it's capped means higher moisture and less-developed flavour.
  • Cold-extracted — no heat applied during the extraction process itself.
  • Gravity-strained — the honey passes through a strainer (removing wax fragments, bee parts, larger debris) using gravity alone, not forced through fine membrane filters under pressure.

That's it. No pasteurisation, no ultra-filtration. This is true across all six of our varieties — Ajwain, Tulasi, Multi Floral, Sesame, Sunflower, and Eucalyptus.

What heating (pasteurisation) does

Commercial honey is often heated to around 70°C or higher, briefly, for a few reasons: it kills any yeast that could cause fermentation, it makes the honey flow more easily through industrial filling lines, and — importantly for sellers — it delays crystallisation, so the honey stays "pretty" and liquid on the shelf for longer, since many buyers mistakenly think crystallised honey has gone bad.

What heat changes:

  • Enzymes. Raw honey naturally contains small amounts of enzymes (like invertase, contributed by the bees during nectar processing) that are heat-sensitive. Higher heat degrades them.
  • HMF levels. Hydroxymethylfurfural (HMF) is a compound that naturally increases in honey with heat exposure and age. FSSAI and most honey standards set a maximum HMF limit specifically because heavy heating pushes levels up — HMF is one of the standard markers labs use to detect whether honey has been overheated.
  • Aroma and flavour. Heat drives off some of the more delicate volatile aromatic compounds that give each floral variety its distinct smell — this is part of why heavily processed honey often tastes more generically "sweet" and less like its named flower source.
  • Crystallisation behaviour. Heat dissolves the natural glucose crystals present in raw honey, which is why heated honey can stay liquid on the shelf far longer than raw honey would. This is a cosmetic/shelf-life choice for sellers, not a quality improvement.

What ultra-filtering does

Ultra-filtration pushes honey through very fine filters, often under pressure and sometimes combined with dilution and heat, specifically to remove pollen grains, fine wax particles, and other micro-particulates. The result looks perfectly clear and stays that way for a long time.

The catch: pollen is one of the ways honey's floral source and geographic origin can be verified. Some ultra-filtered honeys have had so much pollen removed that they become difficult to trace back to a source at all — which is part of why food-fraud investigations have flagged ultra-filtration as a technique sometimes used to disguise blended or adulterated honey.

We gravity-strain instead — enough to remove wax bits and debris, not enough to strip out the honey's natural character or traceability.

Does raw honey "keep more nutrients"?

Honey, raw or processed, is primarily sugar (glucose and fructose) with water and only trace amounts of other compounds — vitamins, minerals, enzymes, and antioxidant compounds are present in small quantities, not large ones. So we won't tell you raw honey is a significant source of vitamins or minerals in your diet — that would be overselling a food that is, nutritionally, still mostly sugar.

What we will say: raw honey retains more of its natural enzymes, aroma compounds, and pollen character than heavily heated and ultra-filtered honey does, because those things are exactly what heat and filtration remove or reduce. If the reason you buy raw honey is to taste something closer to what the bees actually made, that reasoning holds up.

The crystallisation myth

A lot of people think crystallised honey has "gone bad" or been "mixed with sugar." Neither is generally true. Crystallisation is a natural process driven mostly by the ratio of glucose to fructose in the honey, plus storage temperature. It is one of the more reliable everyday signs that a honey hasn't been heavily processed to prevent it.

Our varieties crystallise at different speeds because of their different sugar profiles:

  • Sunflower Honey creams and thickens naturally, fast.
  • Ajwain Honey crystallises slowly, staying pourable for longer.
  • Sesame Honey has its own nutty, rich character and behaviour.
  • Others fall in between, depending on season and forage.

If your jar of raw honey turns grainy or solid, that's not spoilage — a warm water bath (never boiling, never microwave) will loosen it back up if you prefer it pourable, though many people simply eat it crystallised, spread like a soft solid.

How we test, because "raw" needs proof, not just a label

Calling honey raw is easy to print on a label. We back it up with process and testing:

  1. Harvest only capped, mature comb.
  2. Cold extraction — no heat.
  3. Gravity-straining — no ultra-filtration.
  4. Moisture-tested against the FSSAI limit of 20% or below.
  5. Lot-stamped so every jar traces to its harvest batch.
  6. Lab-checked, every batch, before sale.

Simple checks that hint at processing (though none are proof)

None of these replace lab testing, but they can give you a general sense of how a jar of honey was likely handled:

  • Read the label for the word "raw," "unheated," or "pasteurised." Sellers who heat-process honey usually don't hide it — the word "pasteurised" or a shelf-stability claim is often printed somewhere, since it's considered a selling point for supermarket honey.
  • Look at the clarity. Extremely, uniformly clear honey that never develops any cloudiness or crystals over many months has very likely been heavily filtered and/or heated. This isn't a certainty, but it's a reasonable pattern to notice.
  • Check for a lot number or harvest batch reference. Brands confident in their raw, traceable process tend to print this; heavily blended commercial honey often doesn't, because it may combine honey from many sources and harvests.
  • Compare price to commodity honey. Careful raw harvesting (waiting for capped comb, gentle extraction, gravity-straining, lab testing every batch) takes more time and costs more to do properly than industrial heat-and-filter processing at scale. A price far below typical raw honey pricing is sometimes, though not always, a sign of heavier processing or blending.

Which should you buy?

If you want a honey that behaves consistently on a supermarket shelf for a very long time and never crystallises, processed honey is designed for exactly that. If you want honey closer to what came out of the hive — with natural variation, natural crystallisation, and a stronger sense of where it came from — raw is what you're after.
